Roasted Mushrooms from May Living sounded like it would an easy side dish to make for dinner, and I happened to have some mushrooms I needed to use up. Assembly was simple – you dump the mushrooms with pancetta, bay leaves, rosemary, garlic and salt and pepper and oil on a baking sheet and roast it. At the end you add some white wine and lemon zest. It smelled great as it was cooking. It tasted horrible. Inedible. I generally love mushrooms, but this dish tasted far too earthy for me – really, it tasted like dirt. It was truly awful.
