Martha Mondays: Coconut Cream Tart

Confession: I generally don’t like coconut, but I have learned I don’t hate it like I used to. My kids like it, so I made this coconut cream tart for them, chosen by Brenda at Brenda’s Canadian Kitchen.  It was simple to make – make the crust, toast the coconut then make the cream which is just milk, eggs, cornstarch, and salt.  No brain science needed for this one. It looked pretty and the kids liked it. I tasted it and thought it was good (for something made with coconut!).  This is a nice recipe and definitely looks more complicated than it was.

    Glad you liked it Brette. I know a lot of people aren’t fond of coconut so I was a bit worried picking this recipe, but I’m glad to see everyone has liked it so far!

  2. This was a great pick and Brenda’s Tart looked wonderful too. Sorry I haven’t been participating this summer. With summer vacation and kids all around I was having a difficult time scheduling in Martha Mondays 😦 I’m enjoying reading everyone’s posts and recipe try-outs though 🙂

    Ha! Coconut is one of those “love it or hate it” flavours, like blue cheese. I come down on the love it end myself, so this sounds fab to me!

    Confession: I LOVE coconut, especially of the toasted variety…I have Dorie’s Shortbread crust waiting for more berries (and calling my name to be devoured whole and naked, btw, berries be damned) and also want to make her rum-soaked vanilla cakes…who can I feed all these sweets to????

    Nice! now, can you convert this to a banana cream pie? My husband told me that he wishes he could taste some, and the only way we’ll get some here is by making it ourselves. The recipe for the coconut cream pie seems surprisingly easy!

    I think that if you make the pudding part w/o letting the coconut sit in it and then just put bananas in it instead of coconut it would probably work.
