Martha Mondays: Honeydew Cream Pistachio Popsicles

Sassy Suppers chose this week’s project, which was timely due to the heat wave we’ve had! The project was Honeydew Cream Pistachio Popsicles.  I had popsicle forms years ago when my kiddos were little, but no longer have one, so I just made these in little bowls – kind of a popsicle without the stick. They were easy to make. I just dumped everything in the food processor (except the pistachios). I made the mistake of using salted pistachios which was not good in this! I thought they were interesting, but I didn’t care for them much. Somehow the melon and cream tasted weird to me. Mr. MarthaAndMe liked this, which is weird since he has recently declared he does not like any melon other than watermelon. The kids would not taste it!

  1. I too thought the combination sounded weird and so I didn’t make them. I hope you are coping/enjoying the heat-wave weather.

    I wish it was hot here but it’s been raining all week and definitely not Popsicle weather. But I made them and liked them. I thought they would be quite refreshing on a hot day. I also thought that I would like to try the same recipe using watermelon or even raspberries. I liked the pistachios on the melon pops but think I would leave them off other flavors if I try them.

    We liked these too. I’m planning on posting about them as soon as I can find the cord that will let me download pictures from my camera. I thought these might be great popsicles with a cherry stripe in the middle or something eye-catching and sour to go along with the smooth calm flavor of melon.
